Homemade Sugar-Free Low-GI Bounty Bars

And on top of that, it's super quick to make. No added sweetener and yet I hesitated to add a little agave syrup but coconut already has a naturally sweet taste and the brain often associates it with something sweet (a bit like vanilla), as a result, even without sweetener, it feels sweet enough. And then the chocolate coating ????, even at 70% cocoa, already contains sugar but overall, there will be very little of it. In fact, I find it much better than store-bought bounty bars which I find sickeningly sweet.

Instructions

  • 1.   The recipe for 4 bounty bars:
    - 40g of grated coconut
    - 30g of 10% fat coconut milk/cream in a carton.
    - 20g of solid coconut oil
  • 2.   1⃣ Mix the 3 ingredients in order and pack tightly with a tablespoon.
  • 3.   2⃣ Shape 4 bars with your hands and let them set in the fridge for 1 hour.
  • 4.   Coating:
    - 60g of dark chocolate, minimum 70% cocoa
  • 5.   1⃣ Gently melt (if you heat it too much, it will become lumpy) the chocolate and generously coat the bars using a spoon while holding them with a wooden skewer. Place them on a non-stick mat.
    You can make a little design on top 😉.
  • 6.   2⃣ Put them back in the fridge for 1 hour.
  • 7.   For a thicker coating, add 20g of plant-based milk to the chocolate.
  • 8.   Simple, effective, and delicious, isn't life beautiful 😚
