Cauliflower Parmesan Croquettes in the Thermomix

Instructions

  • 1.   Start by adding water to the bowl of your Thermomix.
    Place the cauliflower florets in the Varoma and cook for 25 minutes, Varoma temperature at speed 1.
    When the timer goes off, the cauliflower florets should be tender, if not, extend the cooking time a little.
    Empty the bowl and leave the Varoma open to let the vegetables cool down, then place them in the bowl of the Thermomix.
  • 2.   Then add the egg, Parmesan cheese, breadcrumbs, salt, and pepper, and mix for 20 seconds at speed 5.
  • 3.   Shape the croquettes, place them on a lined baking sheet, and brush them with olive oil.
  • 4.   Bake your cauliflower Parmesan croquettes in the oven for 20 minutes at 200°C, then for 10 minutes under the broiler.
