Goat Cheese and Bell Pepper Omelette - Low GI

Instructions

  • 1.   Beat the eggs for the omelette, season with salt and pepper. Peel and slice the onion. Cut the bell pepper into 2cm cubes.
  • 2.   Heat the oil in an ovenproof non-stick skillet and sauté the onion and bell pepper for 3 or 4 minutes. Add the eggs and cook for 5 or 6 minutes, until the omelette is almost set.
  • 3.   Crumble the goat cheese over the omelette, sprinkle with paprika and garnish with parsley. Place the skillet under the broiler of the oven at maximum temperature for 2 or 3 minutes. Remove it as soon as the surface is golden brown. Serve with a dressed salad.

  • 1 onion
  • 1 tablespoon of olive oil
  • ½ teaspoon of hot paprika
  • 1 handful of parsley
  • 1 lettuce

  • pepper (according to taste)
