Paleo Omelette

Instructions

  • 1.   Heat a little coconut oil in a non-stick pan.
  • 2.   Mix the eggs, egg white, half of the honey (or maple syrup), and almond milk in a bowl.
  • 3.   Pour the mixture into the hot pan and cook over medium heat.
  • 4.   Add banana slices and let the omelette cook for a few minutes until it sets, then sprinkle with pieces of dark chocolate and let it melt.
  • 5.   Just before serving, add a small seasonal fruit like kiwi/clementine (or a handful of berries) and grated coconut.

  • 19 g of liquid honey
  • 1 seasonal fruit
  • 3 g of coconut oil
  • 50 ml of almond milk (optional)
  • 1 teaspoon of grated coconut (optional)
  • 10 g of dark chocolate 85%
