Broccoli Rice With Parmesan

Instructions

  • 1.   In a food processor fitted with a steel blade, work in batches to avoid overloading the machine and pulse the broccoli until it resembles rice, about 5 to 10 pulses.
  • 2.   Measure 3 cups of broccoli rice. In a large skillet over medium-high heat, sauté the onion, garlic, and chili flakes for 5 minutes, stirring every minute. Add the broccoli rice, season with salt and pepper, and sauté for another 5 minutes. Finally, add the Parmesan, mix well, and remove from heat. Enjoy on its own, as a side dish, or with a fried egg and Parmesan shavings.
