Assorted Mini Quiches

Instructions

  • 1.   You will need small, easily removable ramekins
  • 2.   Preheat the oven to 200°C (or 375°F)
  • 3.   Prepare your ramekins with the desired condiments for your mini quiches: I suggest making several of each kind. You can combine diced salmon (raw or smoked) with spinach, bacon and grated cheese, tomatoes or spinach with goat cheese... The possibilities are endless!
  • 4.   In a bowl, beat 3 whole eggs with 150 ml of heavy cream, add salt, pepper, a pinch of nutmeg, and optionally (depending on taste) a pinch of mild curry. (Be careful: not too much salt with the bacon, otherwise it will be inedible)
  • 5.   Pour the mixture into each ramekin, filling them up
  • 6.   Bake your mini quiches for about ten minutes. The cooking time may vary depending on your oven: insert a knife into a ramekin, it should come out slightly moist but not wet, just like a good omelette.
  • 7.   Serve the mini quiches hot, warm, or cold, with a side dish (green salad) or without... Follow your inspiration!
