Buckwheat Pancakes with Bechamel Sauce and Ham

. In a bowl, mix the buckwheat flour and salt, and gradually whisk in the water (and milk).

. Add the egg.

. Finish with the oil and let it rest.

. Let it rest for 1 hour.

. For cooking, spread the slightly runny batter using a 'rouable' (a utensil shaped like a "T").

. Bechamel Sauce Preparation
Dissolve the cornstarch in a portion of the cold milk.

. Boil the milk in the microwave, duration varies depending on the microwave power.

. Pour the milk/cornstarch mixture into the boiling milk.

. Mix and heat for 1 minute at full power in the microwave. If needed, heat again.

. Season and add oil if needed.

. Spread the bechamel sauce on the diameter of the pancake.

. Then place the ham on top.

. Fold the pancake and roll it up.

. Sprinkle with grated cheese.

. Heat in the oven to melt the cheese.
