Pizza Dough Recipe

Here's how I prepare my pizza dough: by hand, as I did for a long time, and now mostly with a mixer for convenience! With this basic dough, I can make all kinds of pizzas by varying the toppings! For about 750 g of dough, which is enough for 2 pizzas. Perfect for a family.

Instructions

  • 1.   Pour the flour into a bowl, make a well in the center, and add water and salt.
  • 2.   Mix with a spatula while adding olive oil.
  • 3.   In a small bowl, dissolve the yeast in a little warm water with a pinch of sugar, then add it last.
    Knead until the dough is smooth and forms a ball that comes away from the sides of the bowl.
  • 4.   Note: if necessary, adjust the amount of water if the dough is a little hard by adding a few drops at a time, as the exact amount depends on the flour ;-)
  • 5.   Place a cloth over the dough and let it rest at room temperature/warm for about 1 hour, until the dough doubles in size.
  • 6.   Knead the dough again just to remove the gas, then divide it into 3 portions (about 250/260 g each), or 4 depending on how you plan to use it, and roll them out on an oiled baking sheet.
  • 7.   Let it rest for a good 1/2 hour, then top it according to the chosen pizza recipe!
  • 8.   Steam and convection cooking for 10 minutes at 220 degrees, then 5 minutes in convection mode.
