Braised leek & brie quiche
So much better than the classic quiche!

. Preheat the oven to 200°C (400°F). Wash and finely slice the leeks.

. Add them to a pan with a knob of butter.

. Season with salt and pepper, add the sugar, mix well, and cook for 5 minutes over high heat.

. Place the pastry in your pie dish and prick it with a fork. Once the oven is hot, pre-bake the pastry for 5 minutes.

. Add the balsamic vinegar to the pan with the leeks. Mix well and cook for an additional 5 minutes.

. In a bowl, add the eggs, milk, cream, salt, and pepper, and whisk vigorously.

. Remove the pastry from the oven, spread the leeks evenly on the bottom.

. Then pour the quiche mixture over it and add the sliced brie.

. Season with salt and pepper, then bake the quiche for 30 minutes at 200°C (400°F).

. It's ready! Serve with a green salad.
