Braised leek & brie quiche

So much better than the classic quiche!

Instructions

  • 1.   Preheat the oven to 200°C (400°F). Wash and finely slice the leeks.
  • 2.   Add them to a pan with a knob of butter.
  • 3.   Season with salt and pepper, add the sugar, mix well, and cook for 5 minutes over high heat.
  • 4.   Place the pastry in your pie dish and prick it with a fork. Once the oven is hot, pre-bake the pastry for 5 minutes.
  • 5.   Add the balsamic vinegar to the pan with the leeks. Mix well and cook for an additional 5 minutes.
  • 6.   In a bowl, add the eggs, milk, cream, salt, and pepper, and whisk vigorously.
  • 7.   Remove the pastry from the oven, spread the leeks evenly on the bottom.
  • 8.   Then pour the quiche mixture over it and add the sliced brie.
  • 9.   Season with salt and pepper, then bake the quiche for 30 minutes at 200°C (400°F).
  • 10.   It's ready! Serve with a green salad.

  • 20 cl of milk
  • 10 cl of heavy cream
  • 60 g of brie
  • 2 teaspoon of powdered sugar
  • 1 tablespoon of balsamic vinegar
