Mushroom & Comté Quiche

. Preheat the oven to 200°C (400°F). Wash and finely slice the mushrooms.

. Add them to a hot frying pan with a drizzle of olive oil and sauté for 5 minutes, stirring regularly.

. Place the pastry in your pie dish and prick it with a fork.

. Once the oven is hot, pre-bake the pastry for 5 minutes.

. In a bowl, add: eggs, milk, cream, salt, pepper, and whisk everything vigorously.

. Once the mushrooms are nicely browned, season with salt and pepper.

. Remove the pastry from the oven, spread the mushrooms evenly on the bottom, and grate the Comté cheese on top.

. Then pour the quiche mixture over it.

. Optional: add a few sprigs of rosemary or thyme if you have them at home.

. Season with pepper, then bake your quiche for 30 minutes at 200°C (400°F).

. It's ready! Serve with a green salad.
