Mushroom & Comté Quiche

Instructions

  • 1.   Preheat the oven to 200°C (400°F). Wash and finely slice the mushrooms.
  • 2.   Add them to a hot frying pan with a drizzle of olive oil and sauté for 5 minutes, stirring regularly.
  • 3.   Place the pastry in your pie dish and prick it with a fork.
  • 4.   Once the oven is hot, pre-bake the pastry for 5 minutes.
  • 5.   In a bowl, add: eggs, milk, cream, salt, pepper, and whisk everything vigorously.
  • 6.   Once the mushrooms are nicely browned, season with salt and pepper.
  • 7.   Remove the pastry from the oven, spread the mushrooms evenly on the bottom, and grate the Comté cheese on top.
  • 8.   Then pour the quiche mixture over it.
  • 9.   Optional: add a few sprigs of rosemary or thyme if you have them at home.
  • 10.   Season with pepper, then bake your quiche for 30 minutes at 200°C (400°F).
  • 11.   It's ready! Serve with a green salad.
