Leek and feta quiche

Instructions

  • 1.   Preheat your oven to 180°C (350°F). Remove the green part of the leeks, cut them in half lengthwise, and then into approximately 3 cm (1 inch) pieces.
  • 2.   Place them in a colander and rinse thoroughly to remove any dirt residue. Drain.
  • 3.   In a hot pan, add a knob of butter (or olive oil) and sauté the leeks for about 5 minutes until they are lightly golden.
  • 4.   In a bowl, add the eggs, milk, and cream, season with salt and pepper, and whisk until you obtain a homogeneous texture.
  • 5.   Place the pastry in a tart pan, pour the cooked leeks over it, and crumble the feta on top.
  • 6.   Pour the mixture into the tart pan. Bake for 30 minutes. It's ready!
