Zucchini and Broccoli Soup (Low Glycemic Index, Low Fat)

Instructions

  • 1.   In a pressure cooker, add the vegetables, bouillon cube, chopped onion, and soy cream.
  • 2.   Add enough water so that it barely covers the vegetables.
  • 3.   Cook for 20 minutes from the start of the pressure release. Blend until smooth.
  • 4.   Serve very hot, sprinkling grated gruyère cheese on each plate.
