Quinoa and Chicken Soup (Low GI)

Instructions

  • 1.   Cut the chicken into small pieces. Dice the carrot, zucchini, and onion into small cubes.
  • 2.   Sauté the vegetables in olive oil for 5 minutes. Add the rinsed and drained quinoa, broth, chicken, and lemon juice. Let simmer for 15 to 20 minutes.
  • 3.   Serve the soup sprinkled with various herbs and drizzle with a dash of oil.

  • 200 g of chicken cubes
  • 150 g of quinoa
  • 1 pinch of salt
