Lentil Soup with Morteau Sausage (Low GI SK)

Instructions

  • 1.   Wash, peel and dice the carrots. Wash the celery stalks and dice them. Peel and finely slice the onion. In a pot with a little oil, sauté the sliced vegetables for 2 minutes. Add the lentils, mix well, and cover with water. Let it cook on low heat for 20 minutes.
  • 2.   Add the Morteau sausage and pour enough water to almost cover the sausage. Let it cook on low heat for 30 minutes. Add the 2 bouillon cubes and mix until fully dissolved.
  • 3.   Take 1 tablespoon of vegetables per serving, blend the soup, and place 1 tablespoon of vegetables and slices of sausage on top of the blended soup.
  • 4.   Serve with chopped parsley.
