Vegan Banana Cake

This vegan banana bread is both light and very moist with a sweet flavor that is not too sugary. It can be prepared in less than 10 minutes with just a few basic ingredients.

Instructions

  • 1.   Preheat the oven to 180°C (350°F) and grease a loaf pan of about 23×13 cm (9×5 inches).
    In a bowl, mix the mashed bananas with a fork, sugar, vegetable oil, almond milk, and almond powder.
    In another bowl, mix the flour with the baking powder, baking soda, salt, and cinnamon if using.
    Incorporate the dry ingredients into the wet ingredients, without overmixing. Add the nuts and quickly stir to distribute them evenly in the batter.

    Pour the mixture into the loaf pan and bake for 50-60 minutes, or until a knife inserted into the center of the banana bread comes out clean. Let it cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before enjoying.

  • 3 bananas
  • 100 g of agave syrup
  • 60 ml of vegetable oil
  • 60 ml of plant-based milk
  • 50 g of almond powder
  • 150 g of flour
  • ¾ teaspoon of baking powder
  • ¾ teaspoon of baking soda
  • ½ teaspoon of cinnamon powder (optional)
  • 40 g of walnut kernel
  • salt (according to taste)
