Childhood Vegetable Puree

Prepared in large quantities and then frozen, it ensures a serving of vegetables for busy meals! This puree has pleased all the children I've cared for, to the point of becoming a Proustian madeleine! The "pot-au-feu" trays are perfect for having the right quantities of cabbage, celery, etc. (1kg of carrots, 500g of potatoes, and a 1kg tray of "pot-au-feu vegetables" and you're good to go), but don't hesitate to use whatever vegetables you have on hand or prefer! For example, you can replace white cabbage with cauliflower, add more leeks, or for a milder taste, add potatoes, etc.

Instructions

  • 1.   Clean and peel all the vegetables and roughly chop them (the larger the pieces, the longer the cooking time).
  • 2.   Put everything in a large pot (you can add cumin, turmeric, curry, or garlic if you like).
    Add water to halfway up the level of the vegetables.
  • 3.   Cover, bring to a boil, then immediately reduce to medium-low heat and let it cook covered for 20 to 30 minutes.
  • 4.   Check the doneness with the tip of a knife. When it's tender, pass the vegetables through a mill with a little cooking juice, or use a potato masher.
    Season with salt, pepper, and herbs according to your taste.
  • 5.   For those with a sweet tooth, serve by mixing in a slice of butter or a spoonful of cream.
    And for a complete meal, add one to two slices of diced ham (or not!).
