Instructions

  • 1.   Peel all the vegetables, wash them, and cut them into large cubes for the potatoes, pumpkin, and carrots. Finely chop the onion and leek.
  • 2.   In a pot, melt the butter and add the vegetables. Slightly brown them.
  • 3.   Pour enough water to cover all the vegetables, add the bouillon cube, salt, and pepper.
  • 4.   Once it reaches a boil, reduce the heat and let it simmer on low for about 35 to 40 minutes.
  • 5.   After this time, blend everything together with more or less liquid according to your taste.
  • 6.   Add the chopped parsley, cream, and a pinch of nutmeg. Serve with a side of grated gruyère cheese.
