Spiced Monkfish Tajine

Instructions

  • 1.   Soak the olives to remove the saltiness. Slice the onion and crush the garlic. Heat the oil in the Tajine dish over medium heat and sauté the onion and garlic for 5 minutes. Add the raz el hanout, ginger, mix well, and cook for 5 minutes.
  • 2.   Remove the seeds and chop the tomatoes, cut the preserved lemon into small cubes, then add everything to the tajine with 1 glass of water, cumin, cloves, brown sugar, salt, and pepper. Stir and cook covered over low heat for 5 minutes. Reduce 1 glass of orange juice by half in a saucepan with cinnamon.
  • 3.   Cut the orange into regular slices. Add the orange slices and orange juice to the tajine. Simmer covered for 10 minutes. Cut the monkfish into 2 cm thick pieces. Add them to the tajine along with the olives, simply placing them on top of the vegetables.
  • 4.   If possible, remove the cloves. Simmer for 15 minutes. Finely chop the coriander and sprinkle it over the tajine just before serving. Serve and enjoy immediately!

  • 750 g of monkfish tail
  • 4 tomatoes
  • 1 garlic clove
  • 1 handful of black olive
  • 1 preserved lemon (salty)
  • 1 untreated orange
  • 1 clove
  • 1 glass of orange juice
  • 3 tablespoon of olive oil
  • 1 tablespoon of cane sugar
  • 1 ras el-hanout
  • 1 teaspoon of cinnamon powder
  • ½ teaspoon of ginger powder
  • ½ teaspoon of ground cumin
  • 1 fresh coriander
  • salt (according to taste)
  • pepper (according to taste)
