Beef Tajine

Beef tajine with raisins and apricots is a very delicious Moroccan dish for special occasions.

Instructions

  • 1.   Soak the raisins in a bowl of boiling water, then drain them. Peel the onions and cut them into strips. Cut the beef into pieces. Cut the carrots, potatoes, and zucchini (keeping the skin on) into large chunks. Peel the garlic cloves and cut them in half. Peel the tomatoes, remove the seeds, and cut them into strips.
  • 2.   Heat the oil in a pot. Sauté the onions for 1 minute, then add the beef pieces and lightly brown them. Add all the ingredients to the pot, except for the tomatoes. Season with salt and pepper. Cover generously with water. Mix well and cook over medium heat, uncovered, for 1 hour and 30 minutes.
  • 3.   At the end of cooking, transfer the contents of the pot to the tajine dish. Arrange the tomato strips on top. Close the tajine. Preheat the oven to 180°C (350°F). Place the tajine in the oven and cook for 1 hour and 30 minutes, or until the meat is tender. Sprinkle with parsley before serving.

  • 3 large tomato
  • 3 onions
  • salt (according to taste)
  • pepper (according to taste)
  • parsley (according to taste)
