Saffron Beef Tajine with Sweet Potatoes

Tajine or tagine is a traditional cooking dish from the Maghreb, originally made of clay and topped with a conical lid. It is also the name of a culinary preparation, a kind of stew cooked in a sealed pot. Instructions

  • 1.   Peel the sweet potatoes and cut them into cubes. Cut the beef into cubes as well. Slice the bell pepper into strips after removing the seeds and white fibers. Finely chop the onions.
  • 2.   Pour 3 tablespoons of oil into the tajine dish. Heat it up and add the beef cubes and saffron or turmeric. Brown the meat on all sides for 4 or 5 minutes. Season with salt and pepper, then pour about 10 cl of water. Let it simmer gently for about twenty minutes.
  • 3.   Add the chopped onions, bell pepper strips, 1/2 teaspoon of harissa (more or less according to your taste), and a teaspoon of ground cumin. Pour about 30 cl of water and cover the dish. Let it simmer for at least 1 hour and 30 minutes, adding water if necessary during cooking. After this time, the meat should be tender.
  • 4.   Complete your dish with the sweet potato cubes, chopped parsley, and roughly chopped coriander. Cover the dish and let it simmer for another twenty minutes. Preheat the oven to 200°C or 390°F.
  • 5.   Transfer the meat and vegetables to an ovenproof dish. Place the dish in the oven and let the tajine brown for about fifteen minutes. Serve your dish with plain couscous.

  • 3 sweet potatoes
  • 2 onions
  • 1 green bell pepper
  • 1 fresh coriander
  • 1 teaspoon of ground cumin
  • 2 teaspoon of paprika
  • 1 teaspoon of turmeric powder
  • ½ teaspoon of harissa
  • 1 tablespoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)
  • parsley (according to taste)
