Beet and Goat Cheese Quiche

Instructions

  • 1.   Finely chop the onion. Peel and remove the garlic cloves. Grate the cooked beetroot with a coarse grater. Line a buttered tart pan with the shortcrust pastry.
  • 2.   Sauté the red onion and pressed garlic clove in a pan with a little oil until they are soft, then place them on the bottom of the tart. Add the spinach sprouts, peas, grated beets, and crushed almonds.
  • 3.   In a bowl, mix the eggs and the heavy cream, season with salt and pepper, then pour over the tart. Add the fresh goat cheese cut into pieces and sprinkle with thyme.
  • 4.   Bake for 30 minutes at 180°C.

  • 75 g of pea
  • 2 eggs
  • 20 cl of heavy cream
  • 50 g of fresh goat cheese
  • 30 g of almond (optional)
  • ½ red onions
  • 1 garlic clove
  • salt (according to taste)
  • pepper (according to taste)
