Instructions
1. Finely chop the onion. Peel and remove the garlic cloves. Grate the cooked beetroot with a coarse grater. Line a buttered tart pan with the shortcrust pastry.
2. Sauté the red onion and pressed garlic clove in a pan with a little oil until they are soft, then place them on the bottom of the tart. Add the spinach sprouts, peas, grated beets, and crushed almonds.
3. In a bowl, mix the eggs and the heavy cream, season with salt and pepper, then pour over the tart. Add the fresh goat cheese cut into pieces and sprinkle with thyme.
