Bulgur Salad with Feta Cheese | 7 WW Points

To change from tabbouleh, try the bulgur salad with feta cheese. Quick to prepare, light and delicious, this salad is perfect for lunch break. The bulgur salad with feta cheese also goes wonderfully well with grilled dishes when the sunny days arrive!

Instructions

  • 1.   Put the bulgur in a saucepan and add 850ml of boiling water. Stir in the broth and simmer for 12-15 minutes over low heat until the water has been absorbed. Transfer to a large bowl, let cool and fluff with a fork.
  • 2.   Cut the onion, cucumber, and tomatoes into cubes and add them to the bulgur along with the chopped flat-leaf parsley. Take the zest and juice of the lemon, mix them with the mustard and add them to the salad. Crumble the feta cheese and add it to the salad. Season with salt and pepper and let it rest in the refrigerator for 30 minutes before serving.

  • 1 onion
  • ½ cucumbers
  • 2 tomatoes
  • 4 teaspoon of fresh parsley
  • 1 lemon zest
  • 1 teaspoon of mustard
  • 75 g of feta
  • 1 pinch of salt
  • 1 pinch of pepper
