Date Makrout

A classic of oriental pastry.

Instructions

  • 1.   In a large bowl, combine the semolina, salt, sugar, and well-worked butter.
  • 2.   Add water and orange blossom water, and continue to work the mixture until you have a smooth and homogeneous dough.
  • 3.   In another bowl, mix the date paste.
  • 4.   Shape small rolls, split them in the middle, and insert small sticks of date paste into the slit. Seal the opening of the roll and smooth it out. Step 5:
  • 5.   Cut into diamond shapes and fry in hot oil. Brown both sides and then dip in warm honey. Drain and store tightly in a container once the makrouts have cooled.

  • 400 g of date paste
  • 100 g of melted butter
  • 250 g of honey
  • 1 tablespoon of powdered sugar
  • 15 cl of orange blossom water
  • 1 pinch of fine salt
  • 250 g of medium wheat semolina
  • 250 g of fine wheat semolina
  • 15 cl of water
  • 1 frying oil
