Lemon tart verrine

Instructions

  • 1.   Grate the zest of half a lemon.
  • 2.   Squeeze the juice from the citrus fruits. Mix it with the zest and the cornstarch.
  • 3.   Incorporate the sugar, the egg, mix, and add the butter.
  • 4.   Heat in a saucepan over low heat, stirring with a wooden spoon.
  • 5.   When the cream starts to boil, let it cook while stirring for 3 minutes. Crush the cookies with a rolling pin. Distribute these crumbs at the bottom of the verrines, pour the warm cream on top.
  • 6.   Keep refrigerated until ready to serve. Decorate with pieces of meringue.
