Instructions

  • 1.   Cook the potatoes in their jackets the day before.
  • 2.   Peel and slice the potatoes. Slice the onion.
  • 3.   Heat the olive oil in a skillet and add the onion, cook until golden.
  • 4.   Add the duck gizzards and cook for a few minutes. Set aside.
  • 5.   Brown the potatoes in the same skillet.
  • 6.   Add the green beans, bacon, gizzards, and cook for 5 minutes.
  • 7.   Season with salt and pepper, and serve.

  • 1 large can of green beans
