Instructions

  • 1.   Blend all the vegetables in a food processor (Keep the green part of the onions + a piece of each vegetable, finely chop them to keep some crunch)
  • 2.   Mix everything with the couscous in a large dish
    Add salt and pepper.
  • 3.   Let it rest for several hours (overnight) to allow the couscous to rehydrate.

  • 1 kg of medium wheat semolina
  • 2 cucumbers
  • 2 yellow bell peppers
  • 4 green onions
  • 10 tomatoes
  • 2 bunch of fresh mint
  • 250 ml of olive oil
  • 250 ml of lemon juice
  • salt (according to taste)
  • pepper (according to taste)
