They can easily be kept for a few days. They are very good for breakfast.

Instructions

  • 1.   Preheat the oven to 180°C (350°F). Beat the egg, egg white, and sugar until the mixture is smooth and frothy. Gradually add the yogurt, melted butter, flour, baking powder, and then the red currants, mixing after each addition.
  • 2.   Divide the batter into 6 muffin molds and bake for 20 to 25 minutes.
