Vanilla Soy Milk Semolina Pudding

. Finely grate the zest of the lime.

. In a saucepan, bring the milk to a boil. Reduce the heat. Add the semolina gradually, then the lime zest.

. Thicken over very low heat for about ten minutes, stirring constantly.

. Remove from heat. Add the sugar and mix well.

. Pour into small pots immediately.

. Let cool before placing the pots in the refrigerator, covered with plastic wrap to prevent the semolina from drying out.
