Monkfish and Chorizo Skewers

Instructions

  • 1.   • Cut the lime in half and squeeze the juice into a bowl.
    • Add the olive oil, garlic, and parsley.
    • Season with salt and pepper and mix well.
    • Set aside.
  • 2.   • Take the monkfish fillets and cut each piece in half.
    • Place the monkfish pieces in the marinade, mix well, and refrigerate for 1 hour.
  • 3.   • Take the chorizo sausages and cut them into thirds.
  • 4.   • For assembling the skewers, alternate between threading a piece of chorizo and a piece of monkfish.
  • 5.   • On a hot and greased grill, cook the skewers for about 15 minutes, turning them halfway through cooking.
    The cooking can also be done on a barbecue or griddle.
