Duck, fig, pear

Instructions

  • 1.   Cut 4 squares of parchment paper (40x40cm). Preheat the oven to 200 degrees Celsius.
  • 2.   Score the skin of the duck breasts. Season them and cook for 2 minutes on the skin side in a dry pan. Set aside.
  • 3.   Cut the figs in half. Peel the pears, cut them in half and remove the core. Cut the duck breasts in half. Crush the cardamom.
  • 4.   Divide the fruits, spices, and duck into the parchment paper packets. Close them like a purse with a string. Bake for 12 minutes.
