Kohlrabi Salad

Instructions

  • 1.   Wash and peel the cucumber, leaving some strips of skin (or peel it completely). Cut it into quarters lengthwise, then slice it into regular slices. Place the cucumber pieces in a colander, in your sink or over a large salad bowl. Salt the cucumber and let it drain while you prepare the other ingredients.

    Peel the kohlrabi and the apple. Cut them into pieces. Then grate them in a food processor fitted with a grater with holes of the same size or slightly larger than for grated carrots.

    Let the grated vegetable and fruit drain in the same colander, with the cucumbers, while you prepare the sauce.

    Put the mustard in a small bowl. Salt and pepper to taste. Add the juice of the lime. Whisk and pour in half of the heavy cream. Add a drizzle of olive oil. Whisk everything together. Thin out again with the remaining cream. Taste and adjust the seasoning.

    Place the kohlrabi, apple, and cucumber in a salad bowl. Add the parsley. Drizzle with the sauce. Toss the salad and serve immediately.
