Maple and Pineapple Roasted Trout

Instructions

  • 1.   In a bowl, mix maple syrup with 60 ml of pineapple juice, shallots, mustard, and Espelette pepper.
    On an oiled baking sheet, place the trout fillets previously soaked in the mixture.
    Also dip the pineapple slices in the mixture and place them on the baking sheet.
    Grill for 4 minutes on each side in the oven.
    Serve with herb couscous (mint, parsley, and lemon zest).

  • 1 cup of Canned ananas in syrup (drained weight)
  • 2 tablespoon of shallot
  • 15 ml of Dijon mustard
  • 600 g of trout
  • 1 tablespoon of olive oil
  • 3 ml of Espelette pepper
  • 4 leaf of fresh mint
  • 1 small lemon
  • parsley (according to taste)
