Grilled Zucchini, Edamame Pesto, and Fresh Goat Cheese Bagel

Instructions

  • 1.   Slice the zucchini into long strips. Brush them with olive oil and grill on a large grill.
  • 2.   Put the thawed edamame in the blender. Add the pine nuts, grated parmesan, minced garlic clove, and salad oil. Blend until you get a pesto. Adjust the seasoning.
  • 3.   Cut the bagels in half and toast them. Spread pesto on them, then add zucchini slices and basil leaves. Crumble the goat cheese on top and grate some lemon zest over everything.
