Cod Tajine with Fennel and Tomatoes

Instructions

  • 1.   Preheat the oven to 180°C (350°F). Set aside the fennel greens and remove the stems. Slice the bulbs and place them in the tajine. Drizzle with half of the olive oil, season with pepper and salt, and cook for 25 minutes.
  • 2.   Place the cod fillets on top of the fennel. Add the tomatoes cut in half and the fennel greens. Drizzle with the remaining olive oil, season with pepper and salt again. Cook for 12 to 15 minutes, depending on the thickness of the cod fillets.
