Stuffed Sweet Potatoes with Goat Cheese, Pepper and Onion Fondue

Instructions

  • 1.   Preheat the oven to 180 °C (350 °F). Place the sweet potatoes in their skins on a baking sheet lined with parchment paper. Coat them with 2 tablespoons of olive oil and roast for 45 minutes.
  • 2.   Slice the onions. Peel the peppers slightly, remove the seeds, and cut them into large strips. Put everything in a casserole dish with 3 tablespoons of olive oil and thyme. Sauté for 2 minutes, then cover and let sweat for 30 minutes over low heat.
  • 3.   Shell the pistachios and roughly chop them. Cut the sweet potatoes in half and distribute the crumbled goat cheese on top. Drizzle with a little olive oil, sprinkle with a bit of smoked paprika, pepper, and salt, and sprinkle with pistachios. Serve hot with the pepper and onion fondue.

Notes & Suggestions

  • Prefer everything to be hot? No problem: broil the stuffed sweet potatoes to brown the goat cheese.
