1. Cook the pearl couscous in a large amount of water with organic broth, following the instructions on the package.
2. Let it cool in a salad bowl, adding a little olive oil to prevent the grains from sticking together too much.
3. When the couscous is completely cold (ideally prepare it the day before), mix the grains to separate them. If necessary, add olive oil.
4. Cut the cucumber and tomatoes into small cubes.
Slice the onion or shallots.
Add everything to your couscous and mix. Season with pepper, herbs, and salt. Don't be shy with the pepper and herbs.
5. Squeeze the lemons and add their juice to the mixture according to your taste. Be careful, as lemons are very acidic. I usually use the juice of at least 1.5 to 2 lemons.
6. Add freshly chopped herbs according to your taste. Personally, I use a lot.
Taste and adjust the seasoning until it suits your taste.
7. Serve with a barbecue, grilled fish, or a piece of beef.
