Instructions

  • 1.   Sterilize 6 jam jars
  • 2.   Place a plate in the fridge
  • 3.   Wash and remove the stems from the figs
  • 4.   Then cut them into quarters
  • 5.   Squeeze the lemon juice
  • 6.   Finely chop the herbs (mint or verbena or pineapple sage or other)
  • 7.   In the Companion with the ultrablade, place the quartered figs, cane sugar, herbs, and lemon juice
  • 8.   Let it rest for 30 minutes
  • 9.   Cook at 115 degrees Fahrenheit (to really obtain 105) for 15 minutes at speed 2
  • 10.   Blend at speed 10 to eliminate large pieces
  • 11.   Cook again for 30 minutes at 115 degrees Fahrenheit, speed 2
  • 12.   Test the consistency on a cold plate
  • 13.   Fill and then turn the jars upside down
  • 14.   Let it cool before storing or enjoying
