1. Sterilize 6 jam jars
2. Place a plate in the fridge
3. Wash and remove the stems from the figs
4. Then cut them into quarters
5. Squeeze the lemon juice
6. Finely chop the herbs (mint or verbena or pineapple sage or other)
7. In the Companion with the ultrablade, place the quartered figs, cane sugar, herbs, and lemon juice
8. Let it rest for 30 minutes
9. Cook at 115 degrees Fahrenheit (to really obtain 105) for 15 minutes at speed 2
10. Blend at speed 10 to eliminate large pieces
11. Cook again for 30 minutes at 115 degrees Fahrenheit, speed 2
12. Test the consistency on a cold plate
13. Fill and then turn the jars upside down
14. Let it cool before storing or enjoying
