Chickpea and Fresh Goat Cheese Choukchouka

Instructions

  • 1.   Slice the onion and cut the carrots into small pieces. Sauté them for 5 minutes over low heat in a sauté pan, with olive oil and ras el hanout. Then add the rinsed and drained chickpeas, as well as the tomatoes. Rinse each can with 5 cl of water and pour into the sauté pan. Season with pepper, salt, and let simmer for 10 minutes over low heat.
  • 2.   Crack 1 egg into a cup. Make a hole in the mixture and pour the egg into it. Do the same for the other eggs. Cover and let simmer for about 8 minutes until the whites are set. Spread small spoonfuls of fresh goat cheese over the entire choukchouka, season with pepper, and serve immediately with bread.
