Alokos (fried plantain bananas)

Instructions

  • 1.   Peel and cut the bananas into slices about 5 mm thick. Season with salt.
  • 2.   Heat a frying oil to about 180°C (not the hottest setting on a deep fryer). Dip the bananas into the oil. Keep an eye on them.
  • 3.   When one side is golden brown, flip the slices.
  • 4.   Drain well before serving.
  • 5.   It's better to make multiple batches, as the alokos can stick together if stacked.
