Red fruit tiramisu, blackberry cream and granola

Instructions

  • 1.   Put the thawed fruits in a saucepan with the blackberry cream. Bring to a gentle boil, let simmer for 1 minute, and remove from heat. Pour into a large dish (ovenproof) and let it rest in the fridge for 1 hour.
  • 2.   Separate the egg whites from the yolks. Whisk the yolks with the sugar until the mixture becomes pale. Add the mascarpone, mix gently, then fold in the beaten egg whites.
  • 3.   Put the cream in a piping bag and pipe it into glasses, alternating with the red fruits. Sprinkle granola on top, garnish with mint, and serve.
