Express Pesto Lasagna

Instructions

  • 1.   Preheat the oven to 200°C (400°F).
  • 2.   Fresh vegetables option: Wash and cut into cubes, then grill them in a pan.
  • 3.   The sauce: Sauté the chopped onion, then add the spices and let them cook. Add the meat, cook it, then add the tomato pulp. Let it reduce slightly.
  • 4.   In a gratin dish, assemble the first layer:
    - 2 lasagna sheets
    - 1 tsp of pesto
    - 1/3 of the vegetables
    - 1/3 of the meat/tomato mixture
    - 1/4 of the ricotta
  • 5.   Repeat two more times.
  • 6.   Finish with a layer of lasagna, spread with the remaining ricotta and a tsp of pesto. Add the goat cheese in thin slices.
  • 7.   Bake for 20 minutes.

  • 4 teaspoon of Genovese green pesto

  • 200 g of bell pepper
  • 200 g of zucchini
  • 200 g of eggplant
  • Sauce :
  • 1 onion
  • 350 g of ground beef
  • 1 teaspoon of Italian spice blend
  • 400 g of tomato pulp
  • 250 g of ricotta
  • 60 g of goat cheese log
