Instructions

  • 1.   Rinse the asparagus and cut off the ends. Peel the ends with a peeler. Cut the asparagus into two sections. Put 70 cl of water in the bowl. Place everything in the steamer basket and start the robot for 15 minutes.
  • 2.   Empty the water from the bowl. Set aside the asparagus. Peel and finely chop the shallots. Place the mixer in the bowl, and add the shallots and olive oil. Start for 5 minutes at 130°C at speed 1.
  • 3.   Add the rice and start the simmer program P1 for 5 minutes. After 2 minutes, add the white wine.
  • 4.   Add the broth and start the simmer program P3 for 10 minutes, temperature: 95 °C.
  • 5.   Finely chop the asparagus ends. Set aside the asparagus heads. Add the asparagus ends to the rice and start the simmer program P3 for 10 minutes, temperature: 95 °C.
  • 6.   Add the Parmesan cheese and asparagus heads and restart at Speed 3, 2 minutes at 95 °C.
