Instructions

  • 1.   Wash and cut the cucumber in half. Remove the seeds. Slice the cucumber into thin rounds.
  • 2.   Cut the cherry tomatoes in half.
  • 3.   Cut the feta into large cubes.
  • 4.   Add the black olives.
  • 5.   Next, prepare the lemon dressing:
  • 6.   In a bowl, whisk together the olive oil, lemon juice, finely chopped mint, salt, and pepper.
  • 7.   A few minutes before serving, drizzle the dish with the dressing.

Notes & Suggestions

  • You can also add tomatoes without the pulp.
