Quick lemon cake

Instructions

  • 1.   Mix the flour, sugar, baking powder, and salt. Add the eggs and oil. Mix quickly until you have a roughly homogeneous dough.
  • 2.   Using a grater or zester, grate the lemon zest and add it to the dough.
  • 3.   Squeeze the lemon and pour the juice into the mixture. If possible, add the pulp (but not the seeds!).
  • 4.   Mix until you have a smooth and homogeneous batter.
  • 5.   Grease a cake pan and pour the batter into it.
  • 6.   Bake in the oven for about 25 minutes at 200°C (392°F) (thermostat 6-7).
