Instructions

  • 1.   Peel and dice the cucumber. Cut the cherry tomatoes in half. Peel and slice the onion. Chop the basil.
  • 2.   In a salad bowl, mix together the cucumber, cherry tomatoes, onion, basil, and chickpeas.
  • 3.   In a bowl, mix together the olive oil and balsamic vinegar. Season with salt and pepper. Drizzle the salad with the dressing and mix well. Serve chilled.
