Tortellini Salad

Instructions

  • 1.   Cook the tortellini until al dente.
  • 2.   Prepare the dressing by mixing all the ingredients.
  • 3.   In a large bowl, combine the tortellini, tomatoes, artichokes, beans, onion, and dressing. Mix to combine. Add arugula and basil and mix again. Season to taste and add Parmesan cheese and red pepper flakes, if desired. Garnish with more fresh basil. Serve immediately or refrigerate for up to 4 days.

Ingredients for servings

  • 400 g of tortellini
  • 1 bag of cherry tomato
  • 200 g of artichoke heart
  • 150 g of canned white beans (drained weight)
  • 1 red onion
  • 1 bag of arugula
  • 1 handful of fresh basil
  • 50 g of grated parmesan
  • 1 pinch of red pepper flakes (optional)
  • Pour la vinaigrette :
  • 5 tablespoon of olive oil
  • 2 tablespoon of white vinegar
  • 2 tablespoon of lemon juice
  • 1 tablespoon of parsley
  • 1 teaspoon of honey
  • 1 teaspoon of dried oregano
  • 1 garlic clove
  • ½ teaspoon of Dijon mustard
  • ½ teaspoon of thyme
  • 2 tablespoon of parmesan (optional)
  • salt (according to taste)
  • pepper (according to taste)
