Instructions

  • 1.   Cook the lentils in a pot of water. Once they are tender, drain them and set aside.
  • 2.   Wash the vegetables. Peel and dice the carrots, as well as the celery. Peel and slice the red onion.
  • 3.   Prepare the vinaigrette by mixing olive oil, lemon juice, salt, and pepper.
  • 4.   Mix the lentils, vegetables, and vinaigrette in a salad bowl. Adjust the seasoning if necessary and enjoy.

Notes & Suggestions

  • It is also possible to add chicken breast to this recipe or a poached egg.
