Eggplant with mozzarella

Can be served as a side dish with a green salad. Excellent for a light dinner in the summer.

Instructions

  • 1.   Wash the eggplants, cut them into 1 cm thick slices. Brush them with olive oil and place them on a baking sheet.
  • 2.   Put them under the broiler for 15 minutes and enjoy them as soon as they come out of the oven.
  • 3.   Cut the mozzarella into slices and place them on each eggplant slice. Season with salt and pepper.

  • 2 tablespoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)
