Instructions

  • 1.   Start by cutting your chicken breast into cubes (preferably small, so you don't have to cut large pieces while eating).
  • 2.   Place your chicken pieces in a dish or large plate. Sprinkle them with 4 tablespoons of cornstarch. Mix well so that all the pieces are well coated.
  • 3.   In a large bowl, mix the egg, flour, water, baking powder, and salt.
  • 4.   Add your chicken pieces and mix well.
  • 5.   Heat the oil in a large non-stick skillet.
  • 6.   Add the chicken to the skillet, without overcrowding it, and cook for about 10 minutes, stirring often, until the chicken is golden on the outside and no longer pink on the inside. If your skillet is small, cook the chicken in batches. That's what I did because I used a wok.
  • 7.   Transfer your chicken to a plate and set it aside while you prepare the sauce.
  • 8.   Sauce preparation:
  • 9.   In a wok or skillet, sauté the grated ginger in sesame oil over medium heat for 2 minutes.
  • 10.   In a bowl, mix together brown sugar, crushed red pepper flakes if using, vinegar, ketchup, soy sauce, and water.
  • 11.   Pour the mixture into the wok, mix well, and bring to a boil.
  • 12.   Dissolve the cornstarch in water.
  • 13.   Once the sauce starts boiling, reduce the heat, add the cornstarch-water mixture. Mix well to avoid lumps and let it cook for about 2 minutes. The sauce will thicken.
  • 14.   Add back the fried chicken pieces that you had previously set aside. Mix and let it warm up for a short time.
  • 15.   Your General Tao chicken is ready! Serve it with rice and/or stir-fried vegetables. Enjoy your meal!
