Green lentil and feta salad

Instructions

  • 1.   Start by preparing the dressing by mixing all the ingredients. Stir well and set aside. Then, cook the lentils in three cups of salted water. Bring to a boil for 15-20 minutes or until the lentils are tender. Once cooked, place the lentils in a colander and let them drain and cool.
  • 2.   Cut and place all the vegetables in a large salad bowl and pour the dressing on top. Add the lentils and mix to coat everything well. Taste and add more salt, pepper, or lemon juice if necessary. Finally, sprinkle with crumbled feta and serve cold.

  • 1 cup of dry green lentil
  • 3 cup of water
  • 1 cucumber
  • 1 red bell pepper
  • 2 cup of cherry tomato
  • 1 small red onion
  • ½ cup of pitted black olive
  • ¼ cup of parsley
  • ¼ cup of fresh mint
  • ½ cup of feta
  • Pour la vinaigrette :
  • ¼ cup of olive oil
  • ½ lemons
  • 1 teaspoon of Dijon mustard
  • 1 tablespoon of honey
  • 2 garlic cloves
  • salt (according to taste)
  • pepper (according to taste)
